- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh cilantro, for garnish
- Sliced jalapeños (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the chopped onion and minced garlic to the beef. Sauté until the onion is translucent.
- Stir in the enchilada sauce, black beans, corn, chili powder, cumin, salt, and pepper. Mix well to combine.
- Let the mixture simmer for about 10 minutes, stirring occasionally.
- Preheat your oven to 350°F (175°C), if you’d like to melt the cheese in the oven.
- Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture. If not using the oven, cover the skillet and let the cheese melt over low heat. Alternatively, transfer the skillet to the oven and bake for about 5 minutes or until the cheese is bubbly and melted.
- Garnish with fresh cilantro and sliced jalapeños if desired. Serve hot with your choice of tortillas, rice, or a salad.
Final Tips
- For extra creaminess, add a dollop of sour cream or a sprinkle of queso fresco before serving.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
- Feel free to adjust the level of spice to your preference by adding more or less chili powder or including spicy jalapeños.
