Ingredients

  • 1 lb (450g) beef sirloin or tenderloin, thinly sliced into strips
  • 1 tablespoon olive oil
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • Cooked egg noodles or rice, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the beef strips and cook until brown on all sides. Remove the beef from the skillet and set aside.

  2. In the same skillet, add the onions and garlic. Sauté until the onions become translucent.

  3. Add the mushrooms to the skillet and cook until they are tender and golden brown.

  4. Sprinkle the flour over the mushrooms, stirring well to coat all the ingredients. Cook for another minute to remove the flour taste.

  5. Gradually stir in the beef broth, making sure to scrape up any bits stuck to the bottom of the skillet.

  6. Add the Dijon mustard and bring the mixture to a gentle simmer. Allow it to cook for about 5 minutes until slightly thickened.

  7. Reduce the heat to low and stir in the sour cream until fully incorporated. Season with salt and pepper to taste.

  8. Return the beef strips to the skillet, gently tossing them in the sauce until they are coated and warmed through.

  9. Serve the beef stroganoff over cooked egg noodles or rice. Garnish with freshly chopped parsley if desired.

Final Tips

  • For the best results, use beef sirloin or tenderloin as these cuts are tender and won’t require long cooking times.
  • If you prefer a thicker sauce, you can increase the flour slightly.
  • Ensure the sour cream is at room temperature before adding it to prevent curdling.
  • Feel free to add additional vegetables, such as bell peppers or peas, for extra flavor and nutrition.

Enjoy this classic dish that brings warmth and delight with each bite! Perfect for a cozy family dinner or comforting meal on a chilly evening.
