Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (15 oz) black beans, rinsed and drained
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 ½ cups enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large saucepan, boil the diced sweet potatoes until tender, about 10 minutes. Drain and set aside.

  3. In a skillet, heat the olive oil over medium heat. Add the onion and sauté until soft, about 3-4 minutes. Add the garlic, cumin, and chili powder, cooking for another minute until fragrant.

  4. Stir in the cooked sweet potatoes and black beans. Season with salt and pepper. Cook for 2-3 minutes until everything is heated through and then remove from heat.

  5. Spread ½ cup of enchilada sauce evenly in the bottom of a baking dish.

  6. Warm tortillas in the microwave for 30 seconds to make them pliable. Spoon the sweet potato and black bean mixture down the center of each tortilla, roll it up tightly, and place seam-side down in the baking dish.

  7. Pour the remaining enchilada sauce over the tortillas and sprinkle with shredded cheese.

  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

  9. Garnish with fresh cilantro before serving.

Final Tips

  • Customize Your Fillings: Feel free to add more veggies like bell peppers or corn for added flavor and nutrition.
  • Cheese Choice: For a vegan alternative, replace the cheese with a plant-based version.
  • Make It Ahead: Assemble the enchiladas ahead of time and refrigerate. Simply bake when ready to serve.
  • Serving Suggestions: These enchiladas pair well with a side of guacamole or a fresh green salad.

Enjoy this wholesome and hearty meal, full of bright flavors and a little kick of spice. Perfect for those cozy nights in!
